Peculiar but Phenomenal Flavor combination

This was one of my favorite dishes, It had such an interesting flavor combination. Of sweet potatoes and bananas, which is so good because the bananas are so creamy and sweet with the crunchy, and sort of savory taste of the potatoes, it's the sweet and salty combination. Plus caramelized onions, I just love caramelized onions!
We found this recipe from one of my mom's old cookbooks. It was Tyler Florence's cookbook, we found the recipe, and had to try it. The recipe very strategically cooks the banana to extract the real banana flavor, and it cooked with the potatoes, so the juice is soaked up by the potatoes. But, the banana with the cream cheese adds tanginess. (we added a little goat cheese for more tang).
My Parents actually met the chef who came up with this recipe and signed our cookbook. They met him at one of the biggest food conventions in the US, in the city of Chicago. Big conventions like that you have to be referred to get tickets, but luckily my mom had a friend who got famous from a food blog. It would be a dream to go to a convention with the most famous chefs in the US and watch them cook, all the inspiration I could get there!
But, even if I might not be able to get an opportunity like that, I still was able to a food fest in Austin. I went with my family and our foreign exchange student Laura, we were able to go around and sample foods from different chefs around the area. Austin is very foodie already, and luckily I will be able to visit it next week. But, it was very fun to go and try different things like there was a small food truck that served different types of macaroni in waffle cones.
At that time I wasn't really as invested in food and cooking as I am now. So, I wish that I would have appreciated it more because there might not be another food fest like that for a while because of Corona. But I would suggest food fests like to anyone who loves to cook, it was so fun! and you can get inspiration and motivation to cook more unique food dishes. Also, eat good food, and who doesn't like food?
